About this Single Origin Coffee

El Mural is a group of small-scale producers from the municipalities of La Palma and Citalá in the northern region of Chalatenango. It is part of the Montecristo Trifinio, a tri-border national park shared between El Salvador, Guatemala and Honduras. Designated as a biosphere reserve in 2011, it is an area of incredibly rich bio-diversity, breathtaking landscapes and a perfect climate.

Honey processing refers to a technique of drying freshly picked coffee while retaining the sticky sweet layer that forms in between the bean and the coffee cherry. Avoiding the use of water, this environmentally friendly approach to coffee production also results in a unique addition of flavour the coffee which in this case coincidentally appeared as a distinct honey like sweetness complimented with subtle notes of warm baker spices.
